Our domain is located in the heart of Beaune, a few meters from the famous hospices.
Created in 2006 by Yvonnick Debray, a passionate wine distributor, our estate is now one of the youngest in Burgundy.
It is based on 4 hectares divided on the Côte de Beaune.
Moreover, in order to diversify our appellations, we buy as much as possible grapes from some very famous domains.
Then, we vinify with the minimum of intervention in our cellar in Beaune.
Vinification

We choose to mature all our wines in French oak barrels. We work with two coopers:
- The family cooperage Claude Gillet, very well known for its selection and craftsmanship.
- And the Cavin cooperage for its signature range: Aphrodite.
The oaks dedicated to these barrels come from the 11th national park of France: The Châtillonnais.
The roots of these oaks plunge into a very poor limestone soil giving an extra fine grain to the wood. After a minimum of 36 months of drying in the open air, the prestigious staves are assembled in unique barrels prized by the greatest domains in Burgundy.

The vineyard
Since 2006, we have been working in a reasoned manner with a clear objective: to intervene as little as possible, whether on the vine or on the wine, so that our bottles can create emotion and perfectly express the terroirs from which they come.
After 13 years of working in this philosophy of respect for the terroir, we finally chose to value our work on the label.
We have therefore formalized since 2019 our conversion to organic farming with one of the most reputable French actors in the sector: Bureau Veritas.
